Coconut Lemon Squares


These Coconut Lemon Squares are refreshingly tart!
A healthy version of a common dessert, this Food Friday recipe
is easy to make and stores well in the fridge. 


Ingredients for Crust:

- 2/3 cup coconut flour
- 1/8 cup rice flour
- 1/8 tsp sea salt
- 1/3 cup coconut oil (liquid)
- 1/4 cup pure honey
- 1 egg
- 1 tsp vanilla extract
- zest of 1 lemon


Directions for Crust:

- preheat the oven to 350º
- line an 8" x 8" glass pan with parchment paper. Set aside.
- in a medium size bowl, mix together the wet ingredients (coconut oil, honey, egg, vanilla) with a whisk
- add the dry ingredients (flours, salt, lemon zest) and stir until evenly combined
- the crust will form a ball, which can be pressed by hand into the bottom of the pan


- poke the crust with a fork
- bake for 10 minutes until the edges turn brown


Ingredients for Filling:

- 1/2 cup lemon juice (3 large lemons)
- 1/3 cup + 1 tbsp pure honey
- 3 large eggs + 1 yolk
- 1/2 tbsp corn starch
- 1/2 tsp coconut flour
- zest of 1 lemon


Directions for Filling:

- IMPORTANT: immediately pour the filling over the HOT crust
- reduce the heat to 325º
- bake for 15-20 minutes or until the centre of the filling sets
- cool on a cooling rack


- best when chilled/stored in the refrigerator
- cut into squares and serve!
