Cocoa Macaroon Bites


Remember when I made the Coconut Almond Macaroons, and already knew I'd want
a cocoa version? Well here it is, Cocoa Macaroon Bites! Not just is this recipe a chocolate version, 
it is completely new and much improved as well! Chewy, moist, chocolately...
there isn't much not to love about this treat!


Ingredients:

- 1 1/2 cups of unsweetened medium shredded coconut
- 1/3 cup quick oats
- 1/2 cup cocoa powder
- 1/2 cup honey or agave
- 1/4 cup coconut oil (melted to liquid)
- 1/2 tsp vanilla


Directions:

- pre-heat oven to 250〫
- in a medium sized bowl, whisk together the dry ingredients (coconut, oats, cocoa powder).
- add the wet ingredients (honey, coconut oil, vanilla) and stir until evenly combined.
- using a spoon or melon baller, spoon small mounds of batter onto a cookie sheet lined with parchment paper (they will not spread out while cooking so you can place the mounds close together).
- bake for approximately 20-25 minutes or until the outsides of the macaroons begin to dry.
- remove from oven and cool on a cooling rack.
- store in the refrigerator to maintain firmness.

- makes 24 small sized treats.
