Bite Sized Sugar Cookies


The Christmas Season wouldn't be complete without enjoying some
holiday cookies. These Bite Sized Sugar Cookies have a crispy consistency and
 a light sweet taste. Although I like them plain, next time I'll definitely consider 
topping the cookies with the same icing from the Pumpkin Spice Square recipe. :) 

Ingredients:

- 1 1/2 cups almond flour
- 1/4 tsp baking soda
- pinch of sea salt
- 1/4 cup coconut oil (heated to liquid)
- 1/4 cup agave or honey


Directions:

- pre-heat oven to 350〫
- in a large bowl, combine the dry ingredients (almond flour, baking soda, salt)
- add the wet ingredients (coconut oil, honey). Stir until thoroughly combined. The dough should be slightly crumbly.
- chill in the refrigerator for 10 minutes
- using your hands, form the dough into a large ball. Place on the clean dry counter top and lightly roll with a rolling pin until desired thickness is achieved.
- using a small cookie cutter (or any cutter for that matter), cut out the cookies and place them on a cookie sheet lined with parchment paper
- reform the remaining dough back into a ball, roll out again and continue cutting cookies. Repeat this process until the dough is gone.
- bake for 6-7 minutes or until the edges begin to brown.
- remove from oven and cool on a cooling rac


- makes 45 mini cookies, 1" in diameter
