Key Lime Cheesecake Squares


The Christmas Holiday Season is around the corner (I know, I know Halloween
was only 2 days ago), but before we know it office parties and family get togethers
will begin. The Holiday Season not only brings plenty of celebration, but 
usually endless amounts of unhealthy food as well.
This year, share a dessert that won't make you and fellow guests feel guilty.
Give these Key Lime Cheesecake Squares a try!

Ingredients for Crust:

- 1 cup pitted dates (soak the dates in water if they are hard)
- 1 cup unsweetened shredded coconut
- 1 cup unsalted cashews
- 1 tsp vanilla
- juice of 2 limes

Ingredients for Topping:

- 1/2 cup light cream cheese (room temperature)
- 1/2 Greek yogurt
- 2 tbsp agave or honey
- 1 tsp vanilla
- 3 tbsp Stevia
- 2 tbsp unsweetened shredded coconut

Directions for Crust:

- place all the ingredients into the food processor and blend until it's an even consistency
- press into an 8"x8" glass dish. Set aside.

Directions for Topping:

- in a bowl, combine all the ingredients
- using a hand held electric mixer, blend the ingredients until smooth

- pour the blended topping ingredients onto the pressed crust, spread evenly over the crust
- sprinkle the coconut onto the topping. Feel free to add some lime zest as well!
- allow the squares to set in the refrigerator

- cut into 16 squares and serve when still chilled
