Food Friday!


Coconut Almond Macaroons


So...I was craving dessert. Since I'm addicted to coconut I decided to make
these Coconut Almond Macaroons. A simple treat that is healthy 
and easy to make. No need to jump off the health wagon over
a craving, this treat got me through.
(By the way, I see a cocoa version in my future so stay tuned for that recipe!)

Ingredients:

- 1/3 cup ground blanched almonds
- 1 cup unsweetened shredded coconut
- 5 tsp Stevia
- 1/3 cup plain Greek yogurt
- 1 tbsp coconut oil (melted)
- 2 egg whites
- 1 tbsp honey


Directions:

- pre-heat oven to 350〫
- in a medium sized bowl, using a whisk combine the wet ingredients (yogurt, coconut oil, egg whites, honey)
- add the dry ingredients (almonds, coconut, Stevia) and whisk until evenly combined
- spoon small mounds of batter onto a cookie sheet lined with parchment paper
- bake for approximately 20 minutes or until the edges of the macaroons begin to brown
- remove from oven and cool on a cooling rack

- makes 12 small or 10 medium sized treats
