Almond Cranberry Protein Balls


Summer is around the corner, and turning on the oven during the warm weather can
be a dreaded event. Make these raw Almond Cranberry Protein Balls as a
quick energy packed snack, that won't make you over heat. Delicious and healthy,
plus easy to make in larger amounts for storage in the freezer
when wanting to curb a quick snack attack.

Ingredients:

- 1/3 cup natural almond butter (or nut butter of choice)
- 1 tbsp honey, agave, maple syrup
- 1 tsp vanilla
- 2 tsp date paste (adjust to alter consistency)
- 3 tbsp vanilla protein powder
- 1 heaping tbsp unsweetened dried cranberries (coarsely chopped)
- 1 heaping tbsp unsalted almonds (coarsely chopped)
- almond flour for rolling balls in (you can make your own almond flour by finely grinding almonds in the food processor)

Directions:

- in a glass bowl, combine the following wet ingredients: almond butter, honey, and vanilla.
- add the protein powder. Stir until well blended and is the consistency of play-dough.
- if the mixture is too dry, moisten it with the date paste. Add small increments at a time.
- using a spoon, fold in the chopped cranberries and almonds.
- using your hands, roll spoonfuls of dough into balls.
- roll the balls in a dish containing several tbsp of almond flour.
- place the balls on a glass plate.
- store the balls in a sealed container in the refrigerator. Enjoy while still chilled.

- makes approximately 8 1" balls.
