Another version of the popular Peanut Butter Protein Balls
are these Coconut Raisin Protein Balls. Still easy to make with a few simple ingredients.

Ingredients:
- 1/3 cup natural peanut butter (room temperature)
- 1 tbsp agave (or honey)
- 1/4 tsp vanilla
- 1/4 cup natural flavoured protein powder
- 1/4 cup unsweetened coconut
- 1/4 cup unsweetened coconut
- 1 tbsp raisins
- 1 tbsp crushed walnuts
Directions:
- in a bowl, mix together the wet ingredients (peanut butter, agave and vanilla).
- stir the protein powder into the wet mixture. Mixture should be smooth and the consistency of Play-Doh.
- stir in the raisins and crushed walnuts until they are evenly dispersed throughout the dough.
- pinch off small amounts of dough, working it in your hands and forming into a ball. If too dry add small increments of warm water (I ended up adding a total of 1 tbsp plus 1/2 tsp of water).
- spread the coconut onto a plate and roll the balls in it, coating the outside.

- place the balls on a glass plate.
- chill in the refrigerator to firm the dough.

- makes 8-10 protein balls.
- once firm, store in the fridge in a sealed container. If refrigerated for any length of time, allow the protein balls to rest at room temperature for approximately 10 minutes to regain their softness.
