Roasted Red Pepper Cashew Dip


Stay on track this Holiday Season! Bring healthy treats to those office parties, 
Christmas sweater parties and pot lucks. Try this 
Roasted Red Pepper Cashew Dip as an alternative to those dips
made with mounds of cheese. Don't forget to toast some pita chips
and bring some veggies sticks to enjoy this healthy appetizer!

Ingredients:

- 3 roasted red peppers (de-seeded and blended smooth in the food processor)
- 3/4 cup roasted unsalted whole cashews (soaked over night and blended smooth in the food processor)
- 1/4 cup plain Greek yogurt
- 1 tsp olive oil
- 1 tsp Dijon mustard
- 1 tsp dried basil
- 3/4 tsp garlic powder (adjust to preference)
- 1/2 tsp pepper (adjust to preference)
- 1/4 tsp sea salt (adjust to preference)

Directions:

- prepare the red peppers and cashews as directed above
- in a large bowl, combine all the wet ingredients using a whisk (blended peppers, cashews, yogurt, olive oil and mustard)
- add the dry ingredients (basil, garlic, pepper and sea salt) to the wet ingredients
- chill in the fridge
- enjoy!
