- 1 large ripe avocado
- 1 tsp vanilla extract
- 1/4 cup agave syrop
- 1/4 cup cocoa powder
- 1 scoop protein powder (flavour of choice - I used natural for this recipe)
- Stevia (optional)
Directions:
- in a bowl, hand whisk the protein powder with 6 tbsp of cold water. Set aside.
- pit, peel and cube the avocado.
- in a deep bowl using an electric hand mixer, blend the avocado chunks until smooth.
- add the vanilla and agave to the avocado, blend with the electric hand mixer.
- using a hand whisk, evenly combine the cocoa powder with the avocado mixture.
- in increments, add the protein powder water that was made earlier. Mix together using a hand whisk.
- using the electric hand mixer, give a thorough final blend to the pudding mixture for several minutes, occasionally cleaning the sides of the bowl with a spatula.
- do a taste test. At this point I find the pudding tastes very much like dark chocolate, a bit tart. If you prefer a sweeter pudding slowly add Stevia until it reaches the desired sweetness.
- pour pudding into small dishes and chill in the refrigerator (makes approximately three 1/2 cup servings).
- enjoy once chilled!
