Food Friday!


Pumpkin Chocolate Chip Cookies


Everyone loves pumpkin and everyone loves cookies, so lets combine the two
 into a great Food Friday recipe! These Pumpkin Chocolate Chip Cookies are
lightly crisp on the outside and moist on the inside.
A perfect bite sized treat for fall!

Ingredients:

- 2 cups almond flour (can be made by finely grinding blanched almonds in a food processor)
- 2 packets of Stevia
- 1/4 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp ground ginger
- 1/4 tsp ground cloves
- 1/8 tsp sea salt
- 1/3 cup pumpkin puree
- 4 tbsp pure maple syrup
- 1/4 cup Stevia or dark chocolate chips

Directions:

- pre-heat oven to 350º
- prepare a baking sheet with a piece of parchment paper
- in a large bowl, combine the dry ingredients (almond flour, Stevia, baking soda, cinnamon, ginger, cloves and salt)


- in a small sized bowl, combine the wet ingredients (pumpkin and maple syrup)


- use a whisk to blend the wet ingredients until smooth
- combine the wet mixture with the dry mixture
- stir in the chocolate chips
- spoon out even amounts of cookie dough onto the baking sheet and press with a fork


- bake the cookies for 10-11 minutes, watch carefully as almond flour burns quickly
- remove cookies from the cookie sheet and cool on a cooling rack
- delicious when still warm from the oven!
