Food Friday!


Healthy Power Bars

 
The Holidays are over and it's time to get back on track! These Healthy Power Bars are a
great snack option while on the run. Fuel your workouts and busy days back at work with a
Food Friday recipe that is nutritious and made with whole ingredients.
Chilled not baked, and easy to make. Hope you try them out!


Ingredients for Bars:

- 1 cup dates (soaked for 15 minutes in hot water then drained)
- 1/2 cup unsalted hazelnuts
- 1/2 cup unsalted almonds
- 3 tbsp vanilla protein powder
- 1 tbsp cocoa powder
- 1 tbsp ground Chia seeds (learn more about this tiny superfood!)
- 1 tbsp unsweetened shredded coconut
- 1 tbsp dried unsweetened cranberries and raisins
- 1/2 tbsp Stevia
- 1 tbsp natural peanut butter
- 1 tbsp water

Ingredients for Topping:

- 2 tbsp stevia or dark chocolate chips
- 1/2 tbsp coconut oil
- 1 1/2 tbsp natural peanut butter
- 1 tsp Stevia


Directions for Bars:

- prepare an 8" x 8" glass dish by greasing with coconut oil
- combine all ingredients for the bars into a food processor
- blend until the ingredients form together into a ball (the nuts should still be coarse)
- using a wooden spoon, press the dough into the prepared 8" x 8" dish


Directions for Topping:

- press the chocolate chips into the top of the bars
- in a small dish, melt the coconut oil, peanut butter and Stevia together. Stir together to evenly combine.
- drizzle the warm mixture over the top of the bars

- chill in the freezer or refrigerator until squares are firm and topping has set.
- cut into bars and enjoy!
